Sticky Beef Mince Stir Fry
We thought we'd share some trusty recipes using our own produce and items from our farm shop, to help inspire some home-cooked meals.
This is a mid-week favourite from Grace, the farm manager. And it's quick and delicious.
Sticky Beef Mince Stir Fry (served with rice): Feeds 2 people.

Ingredients :
1 x tsp Cooking oil
1 x 500g Pasture-fed West Town Farm Beef Mince
1 x Garlic clove
1 x tsp ground ginger (or fresh)
100g Shillingford Organics green beans
50g Grated Shillingford Organics carrot
50g Grated West Town Farm courgette (can replace with another ingredient depending on the season)
Sauce:
1 tbsp Cornflour
3 tbsp Dark soy sauce
2 tbsp Runny honey
100 ml (0.5 cups) Water
Directions:
Heat the oil in a large, deep frying pan over a medium-high heat. Add the mince and cook for 5–7 minutes, breaking it up as it cooks, until nicely browned.
Add the garlic, ginger, courgette, carrot and green beans and continue cooking for another 5 minutes. Sometimes I add a dash of sesame oil here.
Meanwhile, prepare the sauce. Add the cornflour to a jug or bowl and slowly whisk in the soy sauce, adding it a little at a time to avoid any lumps. Stir in the remaining sauce ingredients until everything is well combined.
Increase the heat and pour the sauce into the pan. Bring to a gentle bubble and cook for 2–3 minutes, stirring regularly, until the sauce has thickened and everything is well coated.
Serve with rice and enjoy!
